Coconut Chicken Soup from Nina Planck PDF Print E-mail

Ingredients:
1 qt. Chicken stock, monemade preferable
1/4 t. or to taste  chile pepper flakes
1 t. or to taste ginger, freshly grated (or glenga, if you have access to a thai grocery)
1 can coconut milk, canned
Juice of one lemon or lime
unrefined sea salt to taste
Optional garnishes:  cilantro, scallions, garlic chives, thai basil, chocolate mint
Method:
Boil the chicken stock, skim off any foam, and add the coconut milk, chili flakes, ginger, and lemon juice.  Simmer for 15 minutes, salt to taste and sprinkle with garnishes.  You may want to add pieces of cut up cooked chicken.

About Coconut Oil

Coconut oil is highly saturated. Isn't that unhealthy? One of the few vegetable oils that is highly saturated, coconut oil has been falsely accused of raising blood cholesterol and therefore increasing the risk of atherosclerosis and heart disease. The opposite is true. Coconut oil does not raise blood cholesterol. Coconut fat is extremely healthful, and in tropical countries where unrefined coconut oil is eaten liberally, arterial plaques and heart disease are rare. Coconut milk is rich in lauric acid, the same highly beneficial fatty acid in breast milk, which gives babies strong immunity. Lauric acid is a powerful anti-bacterial, anti-viral, and anti-microbial agent. Coconut oil aids digestion and metabolism, supports the immune system, and protects and heals the skin. Because it is stable at high temperatures and does not oxidize when exposed to heat and light like polyunsaturated vegetable oils coconut oil is also an excellent cooking fat.

Unrefined sea salt has a natural gray or pale pink color. Unlike refined salt, it contains all the natural trace elements and minerals found in the sea. Unrefined sea salt consists of just 84% sodium chloride. The other 16% is magnesium, calcium, potassium, iodine, and several dozen other minerals and trace elements which are essential to every function in the body, from digestion to adrenal function to blood pressure. All these beneficial elements are stripped from refined salt even many sea salts which is 100% sodium chloride.

Chicken broth (with little golden droplets of chicken fat) is known as the Jewish penicillin for its ability to fight infections. Poultry fat is a blend of saturated, monounsaturated, and polyunsaturated fats. They are all good for you. All bone broths (including beef, fish, and veal) contain large amounts of calcium and other minerals in a form easy to assimilate. Broth also aids digestion.
